2. The seam is too deep and easily broken, and the shallow sugar is not easy to penetrate. When there is no cutting machine, it can also be manually cut. It is generally required to draw 8-10 slits for each date, and do not cut both ends when slitting.
3. Wash the jujube The fresh dates after the joints are washed with clean water.
4. Cooking dates Use stainless steel sandwich pot or copper pot to cook dates, use 0.8 times the amount of sugar, such as cooking 25 kg as a pot of raw materials, you need to use sugar 20 kg, and add sugar in divided times. Dissolve 10 kg of sugar with 10 kg of fresh water, boil it with a stir, and turn it over to remove the floating sugar foam. Continue to add the remaining sugar and boil it until the concentration of sugar rises. Boil the sugar to the side of the pan. The boiling point of the sugar liquid is above 105°C. The raw material is close to the sanding. When the firepower is small, the sugar can be directly boiled in the pan, or the jujube can be scooped up and cooled by air blow. After rolling on the vibrator, the sand can be evenly distributed. . Cook each pot for 1-1.5 hours.
5. Drying The sugar-dried candied dates are dried at 65°C to a moisture content of about 20%, which is almost half-dry and semi-wet.
6. The plastic presses the date machine or artificially squashes the dried dates to make the product beautiful.
7. Dry again until the finished product has a moisture content of 16%.
