How to safely store sweet potatoes

Sweet potatoes harvested from the roots of the crop, fresh potatoes, large volume, high moisture content, young tissue, thin skin easily damaged, susceptible to cold damage and infection and rot. Sweet potato still has vigorous breathing during storage, its breathing intensity is ten to ten times larger than that of cereal seeds, and sweet potatoes undergo aerobic respiration when there is sufficient oxygen, and more oxygen is inhaled, and more carbon dioxide and heat are released. When oxygen is insufficient, sweet potatoes undergo anaerobic respiration, producing alcohol, carbon dioxide, and a small amount of calories. Alcohol has a harmful effect on potato blocks and can easily cause a rotten cellar. The requirements for safe storage are: the optimum temperature is 10 to 14°C, the humidity is 80 to 95%, and the oxygen and carbon dioxide in the air are 15% and 5%, respectively. When sweet potatoes are harvested, they should be dug, lightly transported, and gently put. Remove diseased, insect bite, damaged, flooded tubers and store them in the storage place of sweet potatoes for 3-4 days before entering the pit. The storage method is generally using a cellar pit: digging outdoors, 2 meters deep and 1.5 meters wide, the length of which depends on the storage capacity. The top of the cellar is to place one wood column every 80 centimeters, and lay 20 centimeters thick corn straw, rice straw or wheat straw. About 0.5 meters above the ground cover, leaving the exit to the south. During the early storage, attention should be paid to ventilating and cooling, mid-term heat preservation and cold-proof, and the cellar temperature should be kept stable in the later period. The specific requirements are as follows: (1) Initial storage period: Within 20 days after entering the cellar, sweet potato has high temperature and high humidity, and often causes "sweat" phenomenon, which causes wet damage to the piled sweet potato pieces and can cover a layer of hay on the potato heap. Also be careful not to seal the cellar prematurely. (II) Mid-term storage: 20 days after the sweet potato enters the pit, and the middle of the second year and early February, when the temperature is low, it is vulnerable to cold damage and the cellar should be closed. Heaps of grass on a pile of potatoes can also prevent cold damage. (3) Late storage: The physiological function of sweet potato after long-term storage is declining. At this time, when the temperature rises, the ventilation in the pit shall be opened in time to reduce the temperature and humidity in the pit. (D) During the entire storage period should pay attention to two points, one is ground inspection, found that bad potatoes removed in a timely manner; second, must use the light test before the pit, if the fire is immortal, can enter the pit.
